In an attempt to change up the routine of packing my kids sandwiches for lunch, I decided to make curry chicken salad this morning. I serve it with Triscuits and fresh fruit (grapes this morning).
2 large cans of chicken breasts
1 cup chopped green onions
1 cup chopped nuts
1 1/2 cup light mayo
1 1/2 teaspoons of curry powder
Mix together and chill in the fridge. Delicious!
